A apanha da azeitona é feita de forma tradicional e manual, com recurso a varas, a partir de meados de novembro. As árvores que apresentem frutos com anomalias na maturação ou no estado sanitário são rejeitadas durante a colheita. A extração é efetuada a frio, exclusivamente por processos mecânicos.
