Description
Made from Aragonez and Trincadeira grape varieties, meticulously harvested and selected, this wine comes from vines over 30 years old, where the grapes mature gently and evenly, preserving their full aromatic potential and concentration.
After harvesting at optimum ripeness, the grapes are destemmed and subjected to rigorous optical selection, followed by a light crushing. Fermentation takes place in French oak vats, with controlled temperature, complemented by prolonged post-fermentation maceration.
The wine ages for 18 months in French oak casks, followed by bottle aging in the cellars of the Cartuxa Monastery.
It has not undergone tartaric stabilization, thus preserving all the authenticity and character of the grape varieties that give rise to it.
